Fit vs Fat | Raw Kale Salad with Peanut Dressing

Raw Kale Salad, how hipster of me. Except I don’t just eat it because it’s the superfood of the moment and every hipster and his dog are Instagramming a picture of it.  I’ve been eating kale for quite awhile now, because I really do love it.

The nutritional make up of this green leaf is awesome, and so good for you, so I like to eat it at least once per week for dinner.  My usual style is to stir fry it with some crushed garlic cloves and dried chilli flakes, but yesterday I decided to try something different and go Raw.

My trial paid off.  This raw kale salad, complete with carrots, avocado, crushed almonds and a spicy peanut dressing was delicious.  It is recommended that you buy a kale such as Cavolo Nero for raw salads, however I stuck with curly kale and it tasted fine to me.

Hail the Kale!

Raw Kale Salad with Peanut Dressing
  • 1 large bunch of kale, chopped into bite size pieces
  • 1 avocado, diced
  • 1 carrot, grated
  • small handful of crushed almonds
  • 1 tbsp olive oil
  • 1/2 tsp crushed sea salt

For the dressing

  • 3 tbsp smooth sugar free peanut butter
  • 3 tbsp warm water
  • 2 1/2 tbsp tamari soya sauce
  • 1 garlic clove, minced
  • 1 tsp fresh ginger, minced
  • 1 tbsp pure maple syrup
  • 1 tbsp sesame oil
  • 1 tsp crushed red chilli flakes
  1. In a large bowl, massage the olive oil and salt into the kale leaves and set aside for 10 minutes.
  2. Place all the dressing ingredients into a blender (or use an electric mixer) and blend until smooth.
  3. Add the grated carrot to the kale.
  4. Pour half the dressing over the kale and carrot and massage the dressing into the leaves.
  5. Add the avocado and crushed almonds
  6. Spoon the remaining dressing over the salad and toss to mix everything together.

Serves 3-4 as a side dish


    • It’s pretty good! I think I will add some more dried chilli flakes or maybe some hot sauce next time for extra kick. Love Kale!
