Sometimes you just need a damn brownie. If I had my way I’d scoff down a brownie every single day. But the trade off would mean hours in the gym. So instead, I make raw chocolate brownies, indulgent without the guilt!
They’re simple to make, and have zero baking time. They just need a little moment with the freezer to really stick together and you’re good to go! Just four ingredients are required for raw chocolate brownies, and no refined sugar is added which makes these little treats even better.
Raw Chocolate Brownies
2 cups of pitted medjool dates (they MUST be medjool dates)
1 cup of unsalted mixed nuts (you can use whichever nuts you prefer)
4 tablespoons of cacao powder (if you can’t get your hands on cacao, then use 2 tablespoons cocoa powder)
2 tablespoons of maple syrup (the real stuff, NOT the flavoured stuff, or rice syrup if you prefer)
Place the nuts in a food processor and blend until they are crumbly but don’t blend them into a powder like texture, leave a bit of crunch.
Add the dates and blend together with the nuts, until it forms a sticky ball.
Add the cacao and maple and blend again until everything is combined.
Press the raw chocolate brownie mixture into a baking tray and freeze for one hour to set the brownies.
Cut the brownies to your preferred size and keep in the fridge, in a sealed container.
