Eat | Chia Pudding

Chia pudding is so delicious, you feel like you’re having an ‘off-limits’ treat, when in fact you’re doing your body a huge favour with each mouthful. It’s instant pudding for the health conscious! You could actually eat this pudding for breakfast. Guilt free. Hello!

High in omega 3 and protein, and full of antioxidants and minerals, chia seeds are basically little food super heroes. And even better, this dessert is so quick to make. Though you will need a little patience waiting for it to set.

  • 6 tablespoons chia seeds
  • 475ml almond milk
  • 2 tsp vanilla extract
  • 2 tbsp pure maple syrup
  • 2 tsp ground cinnamon

If you want to make Chocolate/Banana Chia Pudding as seen in my photos here, then add the following:

  • 1 banana
  • 2 scoops chocolate protein powder
  • 1 tbsp cacao powder

If you don’t have protein powder, no problem, just add 2 tbsp of cacao powder. You may use cocoa powder too, but cacao is best from a health point of view.

Directions (this couldn’t be more simple!)

  • Place all the ingredients in a blender.
  • Combine until you see a smooth texture.
  • Pour into a sealed container.
  • Leave in your fridge overnight to ‘set’.

For a thicker pudding, blend all the ingredients except the chia in a blender, then stir the chia seeds in afterwards before transferring to a sealed container.

I don’t know about you, but I’m hungry just looking at these photos of my chia pudding. And guess what? I still have some in the fridge, so if you’ll excuse me I need to get to my kitchen pronto.
