Oh man, the silly season can cause havoc on the waistline!  There’s end of year work parties, dinners with friends, drinks at winter markets, and Christmas Day is just a whole other story of overindulgence.

Now I don’t know about you, but me, well I never feel good when I overindulge.  It makes me feel physically and mentally Blah!  That’s not to say, I won’t be eating Christmas pudding or drinking mulled wine, because I sure as hell will be! (And might have already indulged in both this year).  I just try to space out these sessions of gluttony!

So this recipe, Raw Orange Cointreau Truffles, is the perfect ‘treat’ on those days you want to taste ‘Christmas’, but you don’t want that treat heading southbound straight to your thighs.  There’s something about Chocolate and Orange that tastes so festive, and the cointreau gives the truffles the perfect orangey kick.  They’re super easy to make, and super delicious too.  So get going and make some right now!

45g almonds

25g hazelnuts

165g ground almonds

3 tbsp cacao powder

1 tsp vanilla paste

10 medjool dates, pitted

50 ml Cointreau

ring of 1 orange

Place almonds and hazelnuts in a food processor and break into small pieces.

Add the ground almonds, cacao, vanilla paste, dates, cointreau and orange rind, processing until the mixture is well blended and smooth.

Place the mixture in the refrigerator for 10 minutes to make the truffle rolling process easier.

Roll the mixture into balls and roll one side of each ball in the extra cacao.

Store in the fridge or in the freezer if you want to save them for later.
