It’s Sunday! And that means the calories don’t count! Well that’s what I tell myself anyway.
So what better day to make Rocky Road than a Sunday? And because you’ll probably want to start your Monday off on a healthy note, that means you’ll have to eat ALL the Rocky Road you make today. What a damn shame right?
This recipe is super easy, and you can adapt it to your liking. I for one love rose flavoured Turkish delight, but if I’m making this for a crowd, I don’t tend to add it, as it’s definitely an acquired taste. However, if I was making a tray just for me, the Turkish delight would be the first thing I’d add. I like adding pistachio’s to my Rocky Road, but you might prefer roasted almonds. So you get the idea, just experiment and switch one ingredient for another.

250g milk chocolate
250g dark chocolate (60% minimum cocoa)
7 plain sweet biscuits, broken into pieces (use gluten free if you like)
1 cup nuts (your choice on which!)
1 cup chewy fruit jelly sweets
1 cup desiccated coconut
1 ½ cups marshmallows, halved
1 cup rice bubbles
Line a baking tray with baking paper.
Break up the chocolate into pieces, and place on a low heat in a small saucepan, stirring constantly until melted.
Add the biscuit, nuts, sweets, coconut, marshmallows and rice bubbles to the chocolate and mix to combine.
Pour mixture into the baking tray and create an even layer.
Sprinkle with extra coconut, if you like.
Cover with cling film and place in the fridge until it sets.
