How our those healthy lifestyle New Years resolutions working out for you guys? Who’s quit already? Or who’s like me and has eased themselves into 2016 in a rather relaxed way, not putting pressure on themselves to eat salad, and only salad?
I always make goals for the year ahead, but I don’t ever put myself on any crazy diets. I mean, I spent half of my twenties doing that, and eurgh it wasn’t fun! Plus I love eating well these days, so no diets required around here! Part of my new year goals always including trying out new recipes and I love finding delicious, guilt free recipes to try out. So when I came across a recipe for Raweos, (the raw version of the much more sinful original, Oreo’s), I was down to the grocery story as quick as lightning, grabbing all the ingredients so I could make some.
I wasn’t sure how good these Raweos would actually be, but the moment I’d rolled out my Raweos dough, and filled them with cashew cream, I shoved one in my mouth and it tasted so good! They are chewy and gooey, and chocolatey, and sweet, and I can’t wait to make another batch and play around with the flavours too. 150g medjool dates (pitted)
1 tsp pure vanilla paste (or extract)
3 tbsp cacao powder
1 cup cashews (soaked for 2+ hours)
1 tbsp coconut oil
2 tbsp maple syrup
1 tsp vanilla paste (or extract)
Place all the biscuit ingredients in a food processor and whizz together until it reaches a dough-like consistency.
Roll the biscuit mixture into a ball and flatten on a chopping board with a rolling pin.
Cut circle shapes with a cookie cutter and refrigerate until firm.
Drain the cashews and whizz up the filling ingredients in the food processor, until the mixture is creamy and smooth.
Spread the filling onto the biscuits and sandwich together.
Store the raweos in the fridge (but definitely taste test one before that!)
