Raw Chocolate and Blueberry Cheesecake

It was recently TBND’s birthday in March, the very month when we were doing our best to cut out sugar.  I like to make him a birthday cake each year to celebrate, however that wasn’t really going to help our Sugar Free March.

Having both developed a wee obsession for raw cakes over the past year, I decided that the time had come to purchase a food processor and try making my very first raw cheesecake to celebrate his birthday.

The hardest part of the raw cheesecake wasn’t making it.  No that was actually really easy.  The hardest part, was choosing which flavour to make!  Eventually I settled on a Raw Chocolate and Blueberry Cheesecake, I mean how can you go wrong with that flavour combo right?

Ingredients purchased.  Food processor delivered by Amazon.  I was good to go.  The whole process took around 45 minutes, and it was super easy.  There’s none of that ‘will the cake rise?’ concern that you get with regular baking. You just follow the instructions, blending everything together in the food processor, freezing layers as you go, and boom it’s that simple.

If you’ve not purchased a food processor yet, but you’re thinking about it, I would advise buying the best one your money will allow you to.  The one I bought was decent enough, but had I splashed a little more cash, and gone for something more powerful, I think the result would have been better.

Nonetheless, we sliced into the cheesecake on TBND’s birthday, and there were no complaints from either of us.  Word of advice, remove the cheesecake from the freezer a couple of hours in advance of eating it.  I put mine in the fridge, but it was still pretty solid when it came to devouring it, so we didn’t get the proper creamy cheesecake experience, thankfully there’s loads left over so we’ll give it another shot! ;o)

Ingredients
  • Chocolate Brownie Base
  • 50g brazil nuts
  • 50g walnuts
  • 10 medjool dates
  • 2 tbsp maple syrup
  • 3 tbsp cacao powder
  • 2 tbsp water
  • Chocolate Cheesecake
  • 250g cashews (soaked overnight)
  • 1 tsp vanilla extract
  • 60g cacao powder
  • 80ml liquid coconut oil
  • 4 tbsp maple syrup
  • 70ml water
  • Blueberry Cheesecake
  • 250g cashews (soaked overnight)
  • 4 tbsp maple syrup
  • 1 tsp vanilla extract
  • 120ml liquid coconut oil
  • 2 tbsp coconut butter
  • 200g fresh blueberries
  • Chocolate Topping
  • 100g raw dark chocolate
  • 2 large tbsp liquid coconut oil
Instructions
  1. Chocolate Brownie Base:
  2. Pulse the nuts in a food processor until they chopped into small pieces.
  3. Add the dates and pulse to combined with the nuts.
  4. Add the maple and cacao, pulsing to combine.
  5. Pour in the water, pulsing until the mixture comes together in a ball.
  6. Press the mixture into the bottom of a 6inch springform cake tin.
  7. Place in the freezer.
  8. Chocolate Cheesecake:
  9. Drain the soaked cashews.
  10. Place all the ingredients into the food processor and blend until smooth and creamy, which will take a number of minutes depending on the strength of your processor.
  11. Pour the mixture over the top of the brownie layer and freeze for 20 minutes, or until firm.
  12. Blueberry Cheesecake:
  13. Place the cashews, maple syrup, vanilla and coconut oil into the food processor and blend until smooth.
  14. Add the coconut butter and blueberries, and blend until everything is combined.
  15. Pour the mixture over the top of the chocolate layer, and freeze until frozen solid.
  16. Chocolate Topping:
  17. Place the raw chocolate and coconut oil in a bowl and melt in a microwave, or in a pot over a stove top.
  18. Let the chocolate topping sit for a few minutes until it starts to cool and thicken.
  19. Remove the cheesecake from the cake tin, and slowly pour the chocolate topping over the top, allowing it to drip down the sides.
  20. Freeze for 10 minutes to harden.
