NEWS FLASH! I’ve discovered the easiest, most delicious recipe for Banana and Peanut Butter Loaf!
The best bit? You just throw all the ingredients into a blender. Yep! You heard me! It is that simple.
The second best bit? It’s flour/white sugar/butter free! This is music to gluten dodger’s ears! Or just those who are looking for a healthier alternative to a big ol’ slice of calorie laden banana cake.
I was skeptical that it would actually turn out to be a cake when I eyed up the ingredients, because it just doesn’t seem possible! So I threw all the ingredients into my blender, poured it into my loaf tin, studded it with dark chocolate and sprinkled on chia seeds. 25 minutes later I removed the most mouth watering looking Banana and Peanut Butter Loaf from the oven.
I cut myself a slice, I took a bite, and then I immediately cut myself another slice and wondered if I’d be able to conjure up enough willpower to step away from it. I saved some for The Boy Next Door and when he took a bite that evening and lost all control, eating the rest of the loaf, I knew I was on to a winning recipe.
I’ve made it three times in 36 hours! So go give this one a try!
SKINNY BANANA & PEANUT BUTTER LOAF
2 small ripe, peeled bananas
1 large egg
Generous 1/2 cup smooth sugar free peanut butter
3 tablespoons maple syrup (or rice syrup)
1 tablespoon vanilla extract
1 teaspoon ground cinnamon
1/4 teaspoon baking soda
2 tablespoons ground flaxseed (optional)
2 tablespoons chia seeds (optional)
1/2 cup dark chocolate chips, or dark chocolate broken into pieces (optional)
Preheat the oven to 175c and line a loaf tin with baking paper
Place all the ingredients into the blender except the chocolate/chocolate chips and chia seeds, then blend until smooth
Pour the batter into the loaf tin and sprinkle with chocolate/chocolate chips and chia seeds
Bake for approximately 25 minutes, however check at the 20 minute mark as you may find the cake is ready by then
Remove from the oven, and allow to cool (or don’t, because it’s really good warm!)
